They are a group of well trained mercenaries that was wiped out by the Jedi. Jango was the last one

They are not a species, just a culture. So far as I know, they're all humans.

However, no known human bias is known, so it is possible there are other humanoid/near-humans in the Mandalorians as well.

They appear to be a group of humanoids that have had a history of fighting [alongside] the Sith. During the last war, they were all but wiped out. Only six Mandalorians survived, according to (IIRC), the AotC Visual Dictionary, of which Jango Fett was one.

Mandalorians are legendary for their combat skills and their superb armor. If EU reports are still to be believed on them, they sometimes flew into battle on giant war-droids that acted as starships for them.

Edit: Okay, I see what's been confusing people. I'm editing the passage for clarity by changing the word in brackets.

Why didn't the Jedi fight the Sith instead of the Mandalorians?

Only six? why didn't they just hire more people, it'll take a while, but they'll eventually grow back to full strength.

I remember them fighting against the Jedi, not the Sith.

If the AOTC: VD is to be believed a father-son relationship is integral to becoming a Mandalorian. At age thirteen (IIRC) they go through a right of passage thing to become a true Madalorian.

It seems the only way to become a Mandalorian is to be born to one. And since there were only six left, you get the picture.

They fought both. Mandalorians were the Sith's most dangerous ally.

There's only six LEFT. The Jedi and their allies destroyed the rest of them during the wars. The Mandalorians as a culture were wiped out, and only a few people like Jango remain as vestiges of what was once one of the most powerful groups in the Galaxy.

They're not really police--at least not originally. They began as a powerful paramilitary organization. Since then they've obviously waned in influence and strength, after the majority of them were defeated by Jedi Knights and their allies, and the handful of remaining Mandalorians have adapted their skills and talents to other causes. In Jango's case, at least, he became a bounty hunter. I don't have any information on the whereabouts of the others.

Mandalorians are a warrior (human) race from the planet Mandalor.

Allied with the Sith they were defeated by the Jedis many-many years ago.

Mandalor, their home planet is still kicking.

It's the home of the starshipbuilder company Mandal Motors which produced the patrol ship that were used by Boba Fett as Slave-II.

Regardless, you can't simply "hire more people". The Mandalorians had built up skills over generations. With only six left, a lot of expertise died out. Moreover, you simply couldn't train all the replacements.

Jango is also from Concord Dawn, IMHO.

I don't remember what happened to Mandalore.

There's supposed to be something about the Mandalorians in Marvel during the Clone Wars, I dunno what it is yet though.

There was a comic on SW.com about this a few months ago.

There's a comic on the Bounty Hunter game that explains all of this I think. I can't capture enough bounty to see it though.

Lucas made many off-the-cuff remarks about the prequels (many years before he ever started working on them) about the "mandalorian super commandos" who would "fight the jedi" in the "clone wars."

Obviously he changed his mind and the idea developed into what we saw in AOTC. However the EU authors did construct a "back story" of the "Mandalorian Race" based on those early statements.

Essentially just a bunch of aliens wearing Fett-esque armor, etc.

Jango was trained by some of the last mandalorians who were the descendents of the 6 survivors- remember these guys survived about 4000 yeas before ANH.
also after reading the comics (one of the sith war ones) it looks more like the 6 were stuck on a planet that they named maladore, sugesting they hade no original home. just a thought

Mandalorian Shocktroopers
this group of supercommando warriors was formed from the traditions of the ancient Mandalorians. Decades before the Battle of Endor, the Mandalorians - known for their distinctive armor and helmets - fractured into two distinct groups. The true Mandalorians were led by Jaster Mereel, while the splinter group named themselves the Death Watch, and were led by Vizsla. Vizsla nearly destroyed the true Mandalorians on Concord Dawn, but could not. Jaster and his forces regrouped and grew strong again, with the help of mercenaries like Jango Fett. However, they were continually led into traps set by Vizsla and the Death Watch, which led Montross to believe that Jaster's leadership was failing. Many of the Mandalorians, however, stood behind Jaster, and later Jango Fett after Jaster was killed by Vizsla on Korda 6. Montross fled the group, which managed to survive for several more years before being led into an ambush on Galidraan. They were hired by the planetary governor to help defeat a group of insurrectionist rebels, unaware that the governor was under the control of Vizsla himself. The governor, acting on Vizsla's orders, had also contacted the Old Republic Senate, requesting the assistance of the Jedi Knights in defeating the Mandalorians. The governor claimed that the Mandalorians had been slaughtering political activitists and killing women and children, claims that Vizsla's forces actually committed. The Jedi task force, led by then-Master Dooku, eliminated the Mandalorians in combat. Only Jango Fett survived, but he was turned over to the planetary governor of Galidraan and enslaved. (ESB, VD2, JFOS)

This is from the CUSWE. I think Vitas must have been relying heavly on the new comics that have come out, because the info doesn't seem to agree with what came out in the Bounty Hunter books about Boba Fett.
