Leto II Atreides ( in a perfectly dry environment, that is ) in its pre-worm phase or worm phase. I think that Vader's precog would be utterly useless against an opponent that, if he wants it, can precisely predict the future in thousands of years or so...
Shrike would slow time so that Vader could feel the horror envelope him as he slowly tried to stop the shrike but was unable to move fast enough. Nothing spells horror than knowing that you'll be vivisected the split second before it happens.
Vader's Force Choke is what wins most of his fights. The ways to counter that include
1) Frying Vader before he can TK (telekenesis) them (Havok, Professor X)
2) Having TK of their own to resist it (Freiza, Invisible Woman)
3) Being incoperal (The Twins, Ms. Deep)
4) Having anti-magic/psionic fields (Dr. Strange, Magican Gary)
5) Being too tough to TK (Hulk, EVA-01)
6) Beating him in a quick-draw contest (The Flash, Dr. Akabane)
Or:
1) Being from a universe with no midichlorians or no Force (arguably anyone not from the SW galaxy/universe)
2) Being something he can't entirely contain. Would a telekinetic have trouble keeping up with the T-1000 or a Founder? It just seems like you'd have to track its entire surface in your mind to control it.)

Indeed, you don’t need to know the precise workings to break a gear you know would have to be close to a joint or simple smash everything within an area. I highly doubt the Jedi had studied plans of the superbattle driod's for example. Though they probably did know something about the run of the mill version.

mid-high+ level/power spellcasters in most settings.
anyone equiped with WMD.
Many super mosters from various legends/fantasy/sf
