Followed, to my chagrin, by the theme song of 'Angel', which is a beautiful piece of music.
Ah! Angel is number five on my list. I've totally forgotten about that show. And come to think of it, Smallville's theme song ain't that bad.

In no particular order - they're all great:

Forever Knight
Space Above and Beyond
Babylon Five Season 3-5
Sopranos
Andromeda Season1 (going hand in hand with the utter disintergration of the show was the precipitous decline in the quality of the opening themes)
Wherever you go, there you are.

Oh come on, people. I'm 20 years old, and I'm the first person to mention Miami Vice? The show was defined by its music.

"Tank!" from Cowboy Bebop.
"Cruel Angel Thesis" from Evangelion (and I think that their main version of "Fly Me to the Moon" is superior to Sinatra's).
The first OP of Zeta Gundam: "Z - Toki wo Koete".
"Arashi no Nakade Kagaya ite" from 08th MS Team.
Third season OP for Transformers.
"Sakua Saku" from Love Hina.
"Obsession" from .hack//SIGN.
Opening theme from Doctor Who during the Hartnell, Tom Baker, and McCoy eras.
"Maiyonaka no Taiyou" from Tenchi Muyo! GXP.
"Yakusoku wa Iranai" from Escaflowne (I LOVE Esca's opening, and think it's one of the best of the 1990's).
Mission Earth's theme (or whatever that Roddenberry show is).
Opening and closing for Mystery Science Theater 3000.

There are probably some more, but I'm drawing some blanks. Also it annoys me that a lot of shows these days either just use from song from the 60s-70s or have an "OP" that's barely over ten seconds long...

Farscape (especially season 3 and 4's themes)
Gargoyles (its incredible without the voiceover)
MacGyver (the final version. This theme changed so much during the first few seasons.)
Stargate SG-1 (production version)
Happy Days (final version)
Babylon5 (especially seasons 2 - 4)
Xena (without the voiceover, because it sounds corny as hell with it)
Airwolf
Tour of Duty (original theme. It was "Paint it Black" by the Rolling Stones. Unfortunately, it got changed to something else for some unknown reason...and you'll never see it on TV again with that original theme song. :( )
Seaquest (before Capt. Bridger left, then it turned to shit)
