I would definitely clean up the Death Star approach in A New Hope. The ships there look fake as hell - the textures are way too clean and shiny, the ship angles are too sharp. It looks painfully CG.
The Jabba scene with Han in ANH also sucks big time. Specially the Han "stepping on the tail". I'm sure Georgie thought it was hilarious, but I thought it was lame.
I think there's still some matting problems in Empire Strikes Back with the flying TIE fighters in the MF chase, but I'm not sure if that was 100% fixed in the Special Edition.

I have a BMP somewhere that looks like it might be from that missing scene, although for all I know it's actually just a doctored screenshot. Looks pretty good, anyway - 3 B-wings flying away from an exploding ISD, with the DSII in the background. I've never seen the actual footage in-film, though. -While the trench runs are going, intense dogfights between the rest of the Rebel starfighters and the Imperial starfighters that were launched over the Death Star's surface.
-Change the targetting computers so they look a little more advanced than the old Atari console systems.
-Add a scene where some Storm Troopers with the carbines' stock extended are quietly watch the Rebels (maybe a few quick shots of AOTC-ish sniper scope graphics), and just as we see one starting to squeeze the trigger, they get the order to back down herd the Rebels back to their ship.
TESB:
-AT-STs and Snowspeeders throwing blaster fire at each other, and some Imperial speeders bikes escorting the troops accompanying Vader.
-Vader paying a personal visit to the Star Destroyer captain who failed to destroy that asteroid which cause an interruption to the holo meeting.
-Have a scene where the Falcon tries to hide behind a big asteroid, but flying away as a HTL blasts it to bits.
-Have Vader repeat the order that he wanted the Rebels alive when he hears of their escape on Bespin.

-Make the Sarlacc (sp?) scene more blaster fire intense.
-Have a high ranking Alliance officer emphasing how difficult it was to find out about the Death Star because how the Imperials did it with so little of their total resources, and why that means that it will be to their advantage due to lack of conspicuious Imperial presense in the area.
-We want B-Wing anti-capship bombing runs!
