In fact a recent news article that appeared on TF.N today stated that in a recent interview he hinted that additional work had been done. I think this is in reference to cleaning up some lightsaber effects that were never completed, even for the special editions.
Word is that the extras will follow the same format as the Indy set--adequet and of the highest quality, but a little lacking in quantity. In any case, this set is really just an "early" release due to fan demand--Lucas has repeatedly stated that he wants to do the DVD set to end all DVD sets but only after Episode III is released, so that he can be completely and intimatly involved and push the boundaries of DVD (fans have dubbed this the "Ultimate Edition", with vague hints of additional scenes that exist mostly as fanboy wishes).
I'll be happy enough with a bare bones SE-version.

well, regarding the extras on this release, they are just rumors to be sure, but they make sense to me. Van Ling produced the Indy DVD as well as the Prequel DVD's, and LFL is reportedly very happy with the Indy set and it would seem that given the parellels between the two series that SW would be packaged in a similar fashion. Though if this is true it would mean interviews with cast and crew...not sure if theres been any word on that yet. As for the "ultimate edition", that is something that Lucas has been very public about--in fact he was originally going to hold off all 6 films on DVD until 2006 when they would all be released in a giant extra-packed set. Lucas even speculated about giving multiple versions of each movie and contemplated an all-bluescreen version of TPM (this was at the time of TPM's release in theatres). Public pressure lead to the prequels on DVD of course, and the same has happened to the OT now, but it is almost guaranteed that he'll go ahead with his giant "archival", "ultimate", "final", whatever you want to call it, edition.
The rumors of additional scenes are basically fanboy wishes, although they are based off comments Lucas has given where he has stated he'd like to fix a few thing when all the films are done. who knows what that entails though.

around the time of TPM's release, when interviews with him were plentiful and he was hounded by questions of every sort, he was very much. The biggest question was "why isnt star wars on DVD?" (the format had just recently exploded in popularity) and "when is it coming?", to which he always said that he'd like to do a nice, complete box set of all 6 films and really push the limits of what a DVD set can offer, but that he wanted to have total involvement in it, and with the PT taking up all his time, that meant that it would have to happen until sometime after EPIII--2006 seemed likely.

Actually, believe it or not the whole "tahts the way it was intended" does indeed have some truth behind it. In my first-edition copy of his bio Skywalking:The Films of George Lucas, published in 1983, before even ROTJ was released, it says that Lucas was displeased with two officers who are shot on-camera, and naturally, this would extend to Greedo (in fact it may actually specify Greedo as well--i think it says he is upset over hans cold killing or something).
All of this was corrected for the special edition.
Most people dont even notice it, but there are two more deaths, in addition to Greedo that have been censored--two officers, not stormtroopers but unmasked humans, were seen shot on-screen originally. These have been re-edited, so that the few frames of the lazerbolt penetrating them is removed. The first is the comm room controller, where Han and Luke first enter after they disguise themselves ("TK421 why arent you at your post?"). Originally we see han raise his blaster, and then it cuts to the officer drawing his gun and we see the lazer bolt strike him in the chest (sending a small fire of smoke from the hole) and he flies backwards. Now the scene goes to han raising his blaster, the officer drawing his gun, back to han firing and then it cuts to the officer being shot, only this time the few frames where we see him get hit are missing and it instead cut to him reeling backwards from the hit.
The same thing is done with one of the guards in the detention block. The reasoning is that, unlike the masked, inhuman stormtroopers, we see a human face being gunned down on-camera.
Those two instances are fine of course (especially because the on-camera deaths are inconsistant with the rest of the films), but the problem with greedo is that not only does the edit look like complete shit, it chages the character arc.
