I imagine cows would ally with environmental and animal rights groups, form a political party, and try to gain citizens rights. of course, some nation would consider them a threat and wipe them out.

Actually, this kind of reminds me of the situation in Star Control 3, where their version of cows turned out to be the Precursors, the most advanced species in the galaxy. The game was crap though.
But it'd be even freakier if like in that game, cows turned out to be not only sentient, but smarter than us!
I'd still eat 'em though, but first I'd make them give me all their secrets.. mwahahaha.
