I'm not 100% on how the overriding and canon policy works, and this seems to be the place to ask.

If canon literature says 'A' and lower-canon (like the EU books) contradicts it (says 'not-A') clearly we go with A.

But what if canon literature says 'A' from which it makes sense to believe 'B' but EU literature says 'not-B', without adequately explaining why they ignore the implication from A? What do we do in this case?

For example, say that an EU book explicitly stated that lightspeed on the MF is limited to 'c', and though the movies don't exactly say the opposite, it's certainly implied that the MF can go far faster. How is this resolved?

Anything that is explicitly seen on-screen overrides lower-canon references (e.g., arbitrary and minimalist RPG figures for the size of war machines and warships that is clearly inconsistent with their film portrayal). However, the EU takes precedence over "leaps in logic" based on the films. For example, the implicit message of the end scenes in RotJ is that the Emperor was hated and his death celebrated. However, the EU specifies that the scenes shown were rare occurences and that the galaxy was overall dismayed by the death of Palpatine, a beloved leader. In this case, we go with the EU, as the evidence in the films was far from unambiguous (the sample size for those scenes was minimal, &c.).
"But there's no story past Episode VI, there's just no story. It's a certain story about Anakin Skywalker and once Anakin Skywalker dies, that's kind of the end of the story. There is no story about Luke Skywalker, I mean apart from the books."
