You say the Romulan Warbird could beat "anything" the Klingons or Feds had.....but isn't the same true for the Klingons and Feds state of the art startships? A GCS could also beat anything the Romulans and the Klingons had.

Remember that we've never actually seen a warbird accomplish this.
In the aftermath of the Dominion War, the Romulans will be even MORE dominant. They only fought for the second half of the war. It was also clearly stated near the end that Klingons had by far lost the most number of ships. As if that wasn't enough, imagine the Scimitar's new cloaking tech going into the existing warbirds…the Romulans are a terrifying force going into the 2380s. They might be able to dismantle the UFP and Klingon Empire at the same time.
You base your argument of speculation here, remember this is ST and useful technology isn't always used again after it's been destroyed. Besides the Scimitar was Reman in design and not Romulan.
On the flip side, the one Romulan weakness is probably their infrastructure. They hold less territory than either of the other two, which means they put a good deal more of their GNP into their fleet of 1.2km-long warbirds. In a prolonged war, the Roms would have a tougher time replacing the ships they lost.

Dont forget though, the Romulans took huge losses when they had to fight by themselves after the Breen came out with their odd weapons.

Yes. In the computer game "Star Trek: Armada", the Romulans have a lot of different ship classes, although most of them are scaled-down versions of the D'Deridex.

Not that the "Star Trek: Armada" game is canon or even official.

That was the Klingons not the Romulans.
