It's almost certainly because using a two-handed grip allows more precise strikes with greater power and finer control of the blade's motion. It seems that Darth Vader only fought with one hand to show that even one handed he was able to strike powerfully, and because swinging in broad strokes with one hand looks more menacing, increasing (subtly) the threat to our hero.
I don't think that's correct. It was more an example of the erosion of skills and lightsaber forms from the Old Order to Luke's New Order. Luke had to reinvent lightsaber combat forms since, after all, no other jedi were alive to teach him. So its understandable if Luke always used it two handed from lack of experience. It doesn't have anything to do with looking menacing.

what amazes me is that George has this entire universe created where he can do stories from any time period but he constantly only makes them around one what 60 year span. He should be doing what they did with Knights of the Old Republic and really get into the history of the Star Wars Universe. How about a movie about the first Jedi or the first Sith. Either one would have been much better then the Prequels or Sequels.

He leaves that to other people. As far as George Lucas is concerned, Star Wars is the story of the Skywalkers; and he's not interested in telling anything beyond it.

More exactly, "Just Anakin Skywalker's story!" Luke is, in the mind of the "brilliant" Lucas, an unimportant nobody who make up part of the extras cast set up to emphasise his tragic hero. See my signature.

Where are you getting 250,000+ from? The only canon number I'm aware of for Star Destroyers is 25,000.
