Outdoor biking and running has an inherent extra motivation factor: once you're halfway through your circuit, you have no choice but to go the rest of the way in order to get home. At worst, if you've run out of gas you slow down, but walking and slow biking are still legitimate forms of exercise. In a gym on a treadmill or stationary bike, you can get off and stop whenever you want, and there's no need to put in the distance necessary to get home.

That's only partially correct. Usually, there's a much shorter route home than the chosen circuit. A fact I usually keep for myself when a new victi.. err.. friend asks to join me and my usual group. As for the question, I do both, although a lot more of mountain biking. The gymn is handy and a good way of keeping in shape during the week, if I'm too busy to go out four or five hours to ride.
Just remember that in mountain biking, for every extenuating climb there's a glorious downhill. That alone makes it immensably superior to the cursed gymn bikes, that no matter how much you try remain stubbornly in the same damned place.
