I'm not actually trying to blame Lucas for anything. And I interpret the saga with Suspension of Disbelief, which means that the order in which the stories were written is irrelevant.
Anyway, in the entire history of the Republic, where thousand of Sith have likely existed, a handful of them have been redeemed, but until they've caused great devestation to the galaxy. However, in both instances in TPM, Maul was the aggressor, and made no signs he wanted nothing more than to skewer the Jedi in cold blood.
You're right. I wasn't trying to say that Jinn and Kenobi should have reasoned with Maul, though I realize that it may have looked that way. I was just trying to point out that your statement, "Have they [the Jedi] ever met a Sith who came back to the light," which implied that none had, wasn't necessarily correct.
Anyway, Obi-Wan didn't know much about Count Dooku, and he was still alive. What are the odds he's going to know about a few 4,000 year dead Sith? I'm sure that Galactic History 101 has much more important information on the 25,000 year history of the Republic. You know, like the Sith war 1,000 years prior that ravaged the galaxy ;).
Obi-Wan didn't know what Dooku had done since he left the Order, but he certainly knew who Dooku was, and had probably met him on numerous occasions.

Actually, Dooku says that "it's a pity our paths have never crossed before" when he's talking to Obi at Geonosis.

He did say that, but come on. That just means that they never met in person, no surprise seeing as he left the order before Obi's birth. His bust is in the Jedi libary, and how likly is it that Qui-gon never spoke of his own master. Obi new who Dooku was he, simply had never met him; there are after all thousands of Jedi.

I was joking by the way about Obi and Qui-gon trying to turn Maul. I was trying to make the point that "evil" force users are usually killed on sight.

Now intially the whole 2 on 1 fight bothered me during my first viewing of TPM; but I had to admit that was the realistic way to potray the battle chivalry and fair play be damned!

I think were fixating on the Sith to much. The Jedi have a hard on for because, the Sith were the result of the Orders own failures. Clearly they feel responsible for putting the Sith down.

I would say a combination of options 2 and 4.
