Very much so, but I can still dream. Even though it would be horrible if the Empire actually tried to take the galaxy back asnd they wrote a book about this.

If the empire did take the galaxy back, it would be good to see it done by peaceful means, the IR simply providing a better standard of life and protection to it's citizens, and causing worlds to gradually, after a few generations, rejoin the empire.

Well, here is something new considering the IR is really settled with the GFFA and the YV are mostly vanquished. The Remnant should stay at their state militarily, and work on building up relations and improve infastructure and increase minimg. But if they keep up the military with necessary resources what is everyone's specific ideas about how should the Empire spend their reserves torwards an eventual, peaceful victory?

I don't think the IR will ever retake the Galaxy. Instead what you will see is people choosing which government to live under in the allied Galaxy. One of order and power, the other of chaotic freedom.

I can see some planets choosing to join the IR in the future because of past preferences to that style of government. I could even see jointly goverened planets that wish both governments.

Well, if speaking seriously:
the Empire is still really ahead of the Rebels in technology. The TIE Phantoms, though destroyed, still exist as blueprints accessible. Although it may be hard to proguce them now. The Empire has Star Destroyers. The ISD is still way better than even the dreaded mega-fanfic MC 90. The Empire has the cloaking shield. The Empire has... guh, the Empire has no force-users by now, but that is a matter of time. And the Empire does not neccesarily need Sith - it may use Jedi as well. The Empire can also hope for an alighnment with the Chiss. And Chiss fighters & pilots are sooo good.

There is chaos in the Galaxy. In the Vong war, the self-proclaimed New Rebuplic as a state was destroyed, showing weakness and incapability to cope with the problem.

Even by the very beginning people realized that the Galactic Empire, if still existing, would have defended the Galaxy a lot better against the Vong. The ISDs are more powerful. If not for the civil war and anarchy iduced by the tiny Rebel band, they would have met the Vong in overwhelming numbers. The Death Star would have blaster the vong planets with yammosks (that's what they needed to do in Vector Prime and many other cases, remember? ;), the dovin basals or how they are called and so on.
The stormtrooper armor is probably a very good defence measure against bio-weapons of the vong - acid stuff, toxins, and so on and so forth.
The TIE Fighters are the craft wich has maneuverability that can compete with the coralskipper.
And - last but not least - the Vong won due to supreme "overmind" battle coordination. The Empire had that too - the Sith & Dark Jedi (and neutral Force-users) would not mind coordinating their forces in battle via "mind control", the consequences of that are shown best by C'Baoth in Thrawn Trilogy.
But the Jedi with their "passive" resistance did not use "mind control" (remember, they are servants of light and so on). So the rebels lost quite a few battles.

People will realise that, with the Rebels in power, neither peace nor order can be achieved. During 25 years of GCW continuation the New Republic was always on the brink of falling apart or vahishing. It could not protect it's worlds from countless threats. Lots of people died due to the incompetence of the Rebel government (the rebels are not a state, and it was extremely hard for them to evolve from a terrorist movement into a state).
What pushed the Rebels? War with the Empire. Now, as war has passed, people will turn back and see how awfully incompetent the Rebel revolutioneers were.

No it isn't. Its an over-extended destroyer with too many missions only capable of dominating shitty combatants, smaller cheaper ones, or refitted civilian craft in battle.

The MC90 benefits from not having so many missions, and instead being dedicated to destroying other ships.

With no range or independence and are too fragile. The T-65J3s even had survivability issues versus Coralskippers.

Won't deny it, but the Empire was hardly better. Hopefully the GA will overcome the guerrillero mentality of the NR and the first-generation Rebs.
