That could just be for large scale projects, though. I don't know if the self-replicating droids are used in the shipyards.

As long as you get the raw-materials to the construction-site (like in SotE), yes.

They are. Destiny's Way specifically said shipyards when it mentioned them. Although I don't have the book, so I can't provide a quote.

The difference is, DW talked about droid plants increasing the production; not individual droids themselves.
