You're thinking of King Empatoyajos Bran (Brand? Brant?) of the Ganathians. He was indeed a Jedi, but in combat with Lord Vader lost his limbs and apparently most of his lower body; the Ganathians equipped him with an life-support suit that also had repulsors. While his Force capability was diminished, he was still able to use an lightsabre, and took Palpatine's spirit into himself to save baby Anakin Solo.

I think it's conceivable that Maul could have survived, but that was a pretty damn long fall...
It's a strange world. Let's keep it that way.

Spoiler:Its very noteworthy that in the Clone Wars Cartoon, Greivous is never seen parrying blaster fire, he always uses speed to dodge it. This implies a lack of force ability on his part.

I could swear that one of the leaked upcoming comics does imply as part of his life-saving cyborgisation, Grievous was given some sort of enhancement to make him artificially Force sensitive to some degree (and if I do recall correctly, the "doner" Jedi was the deceased Sifo Dias).
Check the SA link I posted. The comic mentioned there is probably it.
The hell am I going to SA. I found out over at MF.com. :P

Or just a lack of the skill to do it. Or maybe he just doesn't do it.

Reading trhough Labyrinth of evil , while there really isnt a connection between Greivous and Ventress , we do read in LoE that Greivous thinks of Ventress as "Dooku's misguided apprentice"

-Dr Roberts, with quite possibly the dumbest thing ever said in 10 years of SDNet.

The reasons Grievous can fight/kill Jedi are pretty obvious:

1.) the Jedi are declining, weakening.. the Dark Side is starting to obscure their abilities and perceptions greatly. The perception thing is bad enough, but others are quite obviously weakening as well. (The exceptions like Yoda and Mace, I suspect, are skilled/disciplined enough to not be as greatly affected by the "dark side" as others.. Maybe they even tap into it in a indirect way.. sorta like Mace's Form VII "vaapad" skill..)

2.) Grievous uses up to four lightsabers and fights like a monkey on acid.. he's got extraordinary strength and dexterity..

3.) body-wise.. he's apparently quite durable and well armored.. and probably quite massive (unlike your standard battle droids.) For all we know he's plated with warship-grade armor (or better.. possibly something more expensive.) which would make him harder to kill/destroy.

4.) If the above weren't enough, Labyrinth of Evil makes it clear that he has some sorrt of repulsor/tractor/forcefield technologies incorporated into him (his leaping abilities would also demonstrate this.) A sufficiently strong "force field" could easily anchor him against Forcec throws, shoves, pushes.. whatnot. And tensor field tech might allow him to better resist crushing.

5.) And he's artificially Force sensitive to a mild degree.
