Sure you can say that Anakin is Jesus, Shmi is The Virgin Mary, Palpatine is Lucifer, and The Force is God, but there are way too many pieces that don't fit for Star Wars to be equivalent with The New Testament. For example: Padme Amidala and her twins (AFAIK, the bible never mentions Jesus having children), also important is the fact that Anakin learns from and becomes an apprentice to Palpatine, who by this interpretation is The Devil. Anakin also, never has Disciples, and dosent (at least within the confines of the movie) become resurrected after his death.
I'll concede that Shmi's virgin birth is a rather large connection to The Bible, but not an all-encompassing one. Lucas was inspired by many sources when he wrote Star Wars- "The Hidden Fortress," "Buck Rogers," and "Flash Gordon" to name a few, but ultimately, Star Wars is a unique creation with many similiarites to dozens of works.
