Bah, we already know how Equestria was made.
On a more serious note, if you take the wording in a literal sense, the "founding" of Equestria could mean that it's a country, rather than the name of the Pony Planet. I guess that may torpedo some fanon, I dunno. But still, I look forward to it. Backstory is awesome, and the fandom didn't collapse over Luna, so it should survive this.
Plus, you can excuse things by saying that it's simply a pageant and thus not a literal historical work, and some liberties were taken. Plenty of wiggle room there.

I'm pretty sure there's dialogue evidence that the Everfree Forest isn't part of Equestria, so we already know that Equestria isn't the whole world.

Isn't the general fanon that there are other countries out there? Like, a griffon nation and a zebra nation and etc. Well, actually I don't think there's that many fanfics that take place outside of Ponyville, let alone Equestria; so I'm not sure if there is a generally accepted fanon on the issue.

I've watched a few episodes of this, and my opinion is that its...okay, but not as good as Foster's Home for Imaginary Friends. Amusingly, I have a friend who is like a male human version of Pinkie Pie. Manic energy, check. Raving insanity, check. Loves to party, check. Lives mostly off of candy, check.

Either the thing's a ridiculously elaborate sham for an otherwise incredibly powerful alicorn (which raises some confusing questions) or Celestia really does move the sun up and down... which raises the question as to why she's not the ruler of the ENTIRE PLANET (though, she may just not want to).
The "controlling the weather up to managing the seasons" thing too can be confusing. But really, it would be rather important to know how do the other countries view Celestia?

'France' might not be a seperate country, but rather a province of Equestria. For all we know there aren't any other countries and the whole known world is a part of Equestria, but not the entire planet - so Equestria has borders (and doesn't cover the entire world), but no neighbours; the regions outside Celestia's control are wildernesses like the Everfree forest.
But if there are other countries, why would Celestia care about ruling them? She's certainly not a megalomaniac; she barely seems to exercise any control over the ponies' day-today lives (with the exception of Twilight) - so I don't think she'd want to invade any neighbours they did have, unless they were being truly epic assholes.

My guess is that Equastria is a magically deeply-infused land, where magic somehow creates an unique ecology. Those connected to the Equastrian ecology have various effects: animals tend to be drawn to ponies (and Fluttershy herself is more deeply connected to the animals themselves), weather is worked by pegaus, seasons are changed by ponies or magic, etc.
While the Everfree Forest is like a conservation park, merely unmarked or a border area that has its own ecology (or maybe the closest equivalent of a "natural" ecology), hence why it is so different.
It would also explain why Fluttershy was unable to connect to any of the animals in the garden during the Gala: she specifically mentioned that they were all imported, hence not part of the Equastrian ecology.
The focus is this is Celestia (and perhaps Luna to a degree).
This makes sense if you consider Discord's actions. He is far more powerful than Celestia and is able to shape the land to his will.
So the entire territory of Equastria is a high-magic zone, stablised by Celestia for the benefit of ponykind. Her being a ruler is more of a symbolic thing than an actual title with government.
A possible source of this high-magic zone (or cause or merely a relation) is the fact that the Elements of Harmony, the most powerful magical artifacts yet, are in the area.

I always saw Celestia as the Equestrian equivalent of the Pope. Even though there are countries besides Italy, the Pope is still seen as the spiritual leader of the world for his particular religion, but he resides in the Vatican City (Canterlot). She may be a bit like Queen Victoria during her reign as well - she was Queen of England, but was deemed ruler of several other nations as well (she was Empress of India for example). So there could be other countries besides Equestria with their own rulers, who are nevertheless still answerable to Celestia. She's the sovereign ruler of Equestria and the spiritual leader of the whole world, in a way.

Yes, but you can make the argument of time. How long did it take for the ponies to go from Ponyville Mayor-house (or whatever it is called) to getting the Elements of Harmony? The whole night? Awsome they had maredowell as batman for the 1990's tv series posters, plus the ending music sounds alot like the opening sequence.

No. The whole episode was just weird. The first third is just RD being 'heroic' and it doesn't feel like there's a real plot starting until after that. And the mane six's actions are just stupid. 'We think RD's being big headed.
