actually, it would be quite interesting if they extended the srtificial gravity outward after the effect of the genesis device. they might actually maintain an ecosystem on the outer hull.... they'd never need to stop for shore leave or supplies because they have a planet on the hull.

Keep in mind, though, that the Death Star, for all its size and bulk, is mostly hollow. Corridors and hangars and energy conduits, I'd say it is between 20 and 30% empty.
