But from what the NT and the accompanying books tell us most of the training happens on Coruscant in the Jedi Temple.
True, but some of the EU novels tell us of places like the Ch'unthor, and Corellian Jedi who had distinct traditions of their own. Then there is Knights of the Old Republic, where an Enclave was present on Dantooine that seemed to facilitate training (granted that was many years before the NT). Also Luke Skywalker never had the benefit of the Jedi Temple, perhaps he would have stayed with blue if it were an option.

Took me a couple of times watching it to figure it out. I figure that the guy doing the saber color effects got confused about whose blade was whose during the scenes in the arena, and used the wrong color during one of the shots.
I belive it was when Mundi and Fisto were going back to the gunship and were blocking blaster shots.
In my DVD version they keep the same colors. but in my cough cough booteleg VCD copy my friend made me it switches colors during the same scene
