IIRC, the novelisation indicates that during this battle Obi-Wan is "one with the Force." I think the chest-plate is a factor of the Force's guidance.Prying apart General Grievous' chestplates was probably just a random act of desperation, or the guidance of the Force.. or some, in-universe, might even look at it as both.
