Suppose that instead of slicing off Mace's hand, Anakin simply blocks Windu's lightsaber. How does the fight turn out?

At that point, Mace will probably stop at nothing to kill Palpatine, and Anakin will do anything to save him. I would imagine the situation might end up like the Episode III Video Game; Anakin and Mace have a full blown duel, resulting in Mace's death either by Skywalker's hand, or by Palpatine after he's regained his footing and the Jedi master is distracted. After Mace makes it clear that the Chancellor has to die, there's no way he'd ever make it out of the office alive.

Gotta figure Mace can take Anakin, but not quick enough to prevent Sidious getting to his feet and intervening, at which point Mace is fucked against them both.

Count Dooku was an impressively powerful Dark Lord and an expert dueler, and yet Anakin’s power with the Dark Side makes him an unstoppable dreadnought.
With Mace attempting to murder Palpatine, with Padme’s life in the balance, and with Palpatine goading Anakin into full-blown use of the Dark Side I’d say Windu ends up headless on the floor…

I'm not so sure, as Mace's fighting style was designed specifically for defeating an opponent who utilizes the Dark Side. 1 on 1, I think Mace could have probably defeated Anakin.

However, it's rather a moot point, since Palpatine would soon enter the fray, and no matter how good Mace is, I doubt he could defeat both Palpatine and Anakin.

Mace would force push him out of the way and kill Palpetine. After that Anakin would be ejected from the Jedi Council. He would be more of a sith than a jedi but maintain some jedi qualities. Padme would not have died and either the council or Anakin would train Luke and Leah. After years of training and gathering support, Anakin's dark side resurfaces, and he and his army perform a coup on Coruscant and take control of the galaxy.
