I went to see Star Trek again on Saturday night with friends who hadn't seen it, and in the post-movie discussion, we found the perfect explanation for Nero's spikey, unsafe ship-of-doom.
After witnessing the destruction of Romulus, Nero pledged himself to the Dark Gods of Chaos to get his revenge. Naturally, they drove him mad, but they also mutated is starship into a scary, spikey death machine. It explains a lot.
