I just heard about this anime, and I was wondering if somebody could just give me a general overview of the plot, and what the Angels actually are(and what they look like)

Okay, basically it's 2015, 15 years after Second Impact, which killed half the world population and changed the axial tilt of the Earth, so it's perpetually Summer worldwide.
The UN sponsored organisation known as NERV uses the Evangelion androids, which are based on the Angels and piloted by 14 year old children, to fight them, to prevent Third Impact from occuring.
Anything else would be spoilers.

Not everybody who watches Evangelion for the first time has someone handy who has seen the movies, read the White Cross book, and been around the fan community to explain everything. This guy watched it cold turkey and that's what you get. I've seen the show, I understood it, and I still think its terrible!

Thus proving that you really need to watch the series at least twice over to get a vague idea of the greater plot. (Since many scenes explaining the relevent details our whiney friend bitched about are in a complex and often unclear order.)
It helps to get a vague understanding of what happens in the movie after you've watched the series too.

The religious elements used in the show and the films are just for thematic/plot purposes. They are not used in any pro/anti-religious way.

Oh and I've seen Evangelion and think that I understand most of it. The only thing that I don't get is how if only a select number of people can be pilots, that they don't strike unless they get paid a huge amount of money. I mean I would ask for my own fricking mansion with a bunch of servants and shit. That and if I was piloting the most powerful weapon in the world(pretty much) I would be demanding a huge salary or else I would go Godzilla on their asses.

He means the Red Cross Book; the unofficial name for the End of Evangelion program that was sold when the film premired in Japan.
If you strike, they'll just fire/kill you and find another pilot. Good Eva pilots are hard to find, so they force them to do it. If you were given the choice of "Pilot the Eva to prevent the end of the world, or we'll kill you," what would you choose?
Besides, if you decided to rebel while piloting, they could just switch to the Dummy Plug or just remotely kill you.
I'm going to try not to get involved in an anime discussion, since I happpen to get really defensive about it.

Indeed, how true. I really can't understand why so many anime fans think Evangelion is la créme de la créme.It's a nothing but set up with no payoff.
IMO, the Japanese should have stopped right after the original Macross (or a couple of years afterwards, at most) and then start working on their acting skills to make decent shows instead of Liveman . I mean these guys were 100% responsible for the creation of the Power Rangers! gackk...
Eva is all about the the consequences of the failure to communicate. A happy ending would have been inappropriate.

I saw the first Evangelion (subtitled, mind you) at DragonCon about 5 years ago. I found in very interesting. When I saw it was going to come on WB, I had to see it. I was thoroughly disappointed.
I have not watched it since and haven't tried to see the "real" version. Eva is good, but don't ever think about watching the US version. It reeks.

Look at Shinji; throughout the series, he is constantly afraid of communicating with others for fear of being betrayed and hurt, but in a twist of irony, it is this isolation that ends up prolonging his sadness and misery even further.
